Mit unserem Shiro Shoyu Koji kannst du deine eigene weiße Bio Sojasoße ansetzen. Dafür brauchst du neben dem Shiro Shoyu Koji nur noch Wasser, Salz, ein ausreichend großes Gefäß und etwas Geduld.

Unser Shiro Shoyu Koji wird aus geschrotetem Bio Dinkel und leicht gerösteten Bio Sojabohnen hergestellt. Beide Zutaten werden nach dem Dämpfen mit einer speziellen Sorte Koji-Spore etwa 40 Stunden lang fermentiert und anschließend schonend getrocknet.

Verwendung

Mit dieser Packung Shiro Shoyu Koji kannst du insgesamt etwa 1,5 Liter weiße Bio Sojasoße herstellen. Alternativ kannst du das Koji auch für die Herstellung eines milden Garum verwenden, wenn du der Maische noch etwas Fischreste hinzufügst.

Auf der Rückseite der Verpackung findest du Rezeptvorschläge für Ichiban Dashi Shiro Shoyu und für Niban Dashi Shiro Shoyu mit der abgetropften Maische der Ichiban Dashi.

Dein eigenes Miso kannst du mit unserem Kome Koji ansetzen.
