Der Faugères Grande Réserve de Schiste ist die purste Form des Ausdrucks der Mineralität der Schieferböden in Faugères. Er wird nur in sehr geringen Mengen sowie ausschliesslich in den besten Jahrgängen erzeugt. Traubensorten: Von unserer besten Reblage Bouzigues, vorwiegend aus Mourvèdre, mit ein wenig Grenache. Ertrag: Sehr geringer Ertrag von durchschnittlich 20 Hektoliter pro Hektar. Vinifikation: Lange Maischegärung sowie manuelles «pigeage» während 4 bis 5 Wochen. Ausbau: Drei Jahre Reifung, vorwiegend in Terracotta-Amphoren, ein kleinerer Teil in französichen Eichenbarriques. Degustation: Ein unglaublich eleganter und tiefgründiger Wein, geprägt von tiefer Eleganz und Minaralität. Die Dekantierung einige Zeit vor dem Trinken sowie die Verwendung von grösseren Weingläsern erhöhen den Genuss dieses Weines. Zum Essen: Der Faugères Grande Réserve de Schiste passt ausgezeichnet zu sehr guten Fleischgerichten, insbesondere zu Kalb und Rind. Trinkreife: Wir empfehlen den Faugères Réserve innerhalb von 12 Jahren zu trinken.
