What is amarillo / yellow coloring?
Yellow Coloring ("amarillo") is the powdered color blend that Cuban and Puerto Rican kitchens use to turn white rice into the deep golden-yellow color of arroz amarillo and paella. Made with annatto + corn flour + a touch of yellow food color, it delivers consistent color without the cost of saffron. Pure color and a tiny bit of warm flavor — unlike Sazón Tropical, it doesn't add the savory garlic/cumin/salt complexity. Use it when you want JUST color.

How to use
Stir 1 tsp into rice cooking water (per cup of rice) at the start. The rice turns golden-yellow as it cooks. Add to paella broth in the same proportion. Sprinkle into stews or sofritos when you want color without heavier flavor.
