Viticulture: Organic (Ecocert, 2014), biodynamic methods Vinification: Sorted, pressed and settled for 24 48 hours. Ambient yeast primary and malolactic fermentation in used barrels at 18C. Racked to the cellar underground to age 18 months on the lees in barrels
Terroir: From the northern edge of the village bordering Saint-Aubin, on a gradual slope that steepens at the top, northeast-facing, average of 300-320m altitude, light, stony, shallow soil.
Viticulture: Organic (Ecocert, 2014), biodynamic methods
Vinification: Sorted, pressed and settled for 24-48 hours. Ambient yeast primary and malolactic fermentation in used barrels at 18°C. Racked to the cellar underground to age 18 months on the lees in barrels (33% new). Fined with casein and lightly filtered when necessary.
Approximately 370 cases are made each year.
