Truffle Ewe is a matured semi soft sheep milk cheese featuring two distinct layers of decadent Italian black summer truffle shavings. After maturing for up to sixteen weeks we divide the wheel into three. The truffle is then added, the cheese re press and left for a further week to fully infuse.
