久違地,為大家帶來這款我很喜歡的最新創作。
這款蛋糕的構思,始於菜市場剛出現各式梨子的初秋;直至入冬轉涼,才決定好她的層次。今個冬季,我想邀請大家,一起品嚐這份季節流轉的餘溫。
每逢轉季,家裡煲湯總喜歡用梨。看著它在慢火中,煮至如琥珀般的通透質地,那種畫面特別療癒。雪梨糖水,往往帶著一種家的味道;那溫潤細膩的口感,彷彿有一種魔力,能緩解焦慮,慰藉勞碌後的疲憊身心。
為了昇華這份溫暖,我在蛋糕中配上了微量的綠豆蔻 (Cardamom)。綠豆蔻是一種很溫和的草本香料,帶點沉穩的木質調。它像是一座橋樑,將清甜的梨和明亮的檸檬,結合成一種暖暖的、複合的香氣。
處理新鮮梨肉和檸檬,是極其繁複費時的工序。 但在我看來,這種拒絕工業捷徑、堅持人性化的創作,正是小店最珍貴的奢侈。
