The vineyards grow between 400 and 550 meters on volcanic porphyry soils rich in stones, giving the wine its distinctive minerality and structure. Fermentation occurs spontaneously with indigenous yeasts in stainless steel tanks with partial whole clusters, followed by malolactic fermentation. The wine then ages in
