We hebben een geweldig mooie ham gevonden en dan bijna om de hoek! De ham van ca 1.2 kg is namelijk bereid van het Limburgse Kloostervarken (Livar). De oorsprong ligt op de eeuwenoude kloosterboerderij van Abdij Lilbosch in Echt. Sinds 1999 werken Livar en de abdij samen om op een maatschappelijk verantwoorde manier varkens te hoeden. Het Livar varken is ontstaan uit een bijzondere kruising van rassen, krijgt natuurlijke voeding, heeft een bed van stro en het kan lekker buiten rondlopen. Zo ontstaat vlees van de beste kwaliteit en dat proef je. De Livarvarkens worden op een aantal speciaal daarvoor ingerichte boerderijen gefokt en grootgebracht en al het vlees wordt in eigen huis bereid of uitbesteed aan geselecteerde bedrijven die kwaliteit en respect voorop hebben staan.

Om het nog specialer te maken hebben we een zakje glacé toegevoegd dat je eventueel kunt aanbrengen voor het bereiden in de oven. Onze chef Bert heeft deze samengesteld van honing, mosterd en wat sinaasappel voor een heerlijke finishing touch!
