Deze wijngaard weerspiegelt het typische karakter van Custoza en levert een blend van de inheemse druivenrassen garganega, cortese en trebbiano. De druiven worden geteeld volgens de Guyot-methode en handmatig geoogst tijdens een iets latere plukperiode om optimale rijpheid te bereiken.

Na een zachte persing ondergaat de most een temperatuursgecontroleerde fermentatie in roestvrijstalen tanks, waarna de wijn enkele maanden rijpt op de fijne ‘lies’. Dit proces voegt complexiteit en rijkheid toe zonder aan frisheid in te boeten. Dankzij deze aanpak heeft San Michelin een aanzienlijk bewaarpotentieel en ontwikkelt hij zich prachtig in de fles. De neus wordt gekenmerkt door intense, rijpe fruitaroma’s, waaronder rijpe citrusvruchten, pompelmoes en peer. In de mond biedt de wijn een ronde en zachte aanzet, ondersteund door elegante zuren die de wijn frisheid geven. De middenbouw is rijker en vol, met een lange, harmonieuze afdronk.
